What is a shrub?

Shrub, derived from the Arabic word for “to drink”. Shrub, or “drinking vinegar”, made with fruit and vinegar was popular during the 17th and 18th centuries. 

In recent years, there is are resurgence of these vinegars in bars.  Add shrubs to your favorite spirit, soda, or both. The acidity brings out the fruit flavor without overloading on the sweet for a complex-tasting, easy-mixing cocktail. 

Add to taste. Start with 1 part shrub to 3 parts sparkling water for a tart, refreshing fruit drink.
